A refreshing and light salad combining sweet mangoes with crisp cucumbers. Perfect for a quick snack or side dish.
Ingredients
2 ripe mangoes, diced
1 large cucumber, sliced
1 small red onion, thinly sliced
1/4 cup fresh cilantro, chopped
1 lime, juiced
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp chili powder (optional)
Instructions
Peel and dice the mangoes.
Slice the cucumber and red onion thinly.
Chop the cilantro.
Combine all ingredients in a large bowl.
Add lime juice, salt, black pepper, and chili powder.
Toss well and serve chilled.
Notes
Use firm mangoes for better texture.
Adjust salt and chili to taste.
Best served fresh.
