25-Minute BBQ Chicken Salad That Steals the Show

Ingredients

2 boneless, skinless chicken breasts
1/2 cup BBQ sauce
4 cups romaine lettuce, chopped
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1 avocado, diced
1/2 cup corn kernels
1/2 cup black beans, rinsed
1/4 cup shredded cheddar cheese
1/4 cup ranch dressing
1 tbsp olive oil
Salt and pepper to taste
Instructions
Preheat grill or skillet to medium-high heat.
Season chicken breasts with salt and pepper, then coat with BBQ sauce.
Grill chicken for 6-7 minutes per side until cooked through.
Remove chicken, let rest for 5 minutes, then slice.
In a large bowl, combine lettuce, tomatoes, red onion, avocado, corn, and black beans.
Top salad with sliced chicken and shredded cheese.
Drizzle with ranch dressing and serve.
