Baked Spinach Mushroom Quesadillas

 

Ingredients:


8 flour tortillas
1 cup cooked spinach, drained and chopped
1 cup mushrooms, sliced
1 cup shredded cheese (cheddar or mozzarella)
1 tablespoon olive oil
1 teaspoon garlic powder
Salt and pepper, to taste

Instructions:
Preheat oven to 400°F (200°C).
Heat olive oil in a skillet over medium heat. Add mushrooms and sauté until soft.
In a bowl, combine mushrooms, spinach, cheese, garlic powder, salt, and pepper. Mix well.
Place a tortilla on a baking sheet. Spoon filling onto half, then fold over. Repeat with remaining tortillas.
Bake 10–12 minutes, until golden and crispy.
Slice and serve warm.
