1. In a large bowl, beat the eggs with the sugar until thick and fluffy.
2. Add the oil, orange juice, zest, and salt. Beat for about 3 more minutes.
3. Sift the flour and baking powder, add them to the mixture, and mix until you get a smooth dough.
4. Cover the bowl and place the mixture in the refrigerator for at least 1 hour (the longer it rests, the more airy it will be).
5. Once the time is up, gently stir the batter to reactivate it.
6. Pour the mixture into paper muffin tins and sprinkle a little sugar in the center for a crunchy touch.
7. Bake in a preheated oven at 200°C for about 15 minutes, or until the muffins are golden brown.
