Chicken Avocado Salad

 

Ingredients:

2 cups cooked chicken breast, diced (grilled or poached) 🍗

1 large avocado, cubed 🥑

1 cup cherry tomatoes, halved 🍅

2 cups fresh lettuce or mixed greens 🥬

2 tbsp fresh cilantro or parsley, chopped 🌿

2 tbsp olive oil 🫒

1 tbsp lemon or lime juice 🍋

1 clove garlic, minced 🧄

Salt & pepper to taste 🧂

👩‍🍳 Method:

In a large bowl, add the lettuce as the base.

Top with diced chicken, avocado chunks, and halved cherry tomatoes.

In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.

Drizzle the dressing over the salad.

Sprinkle with fresh cilantro/parsley for extra flavor.

Toss gently and serve immediately
