Ingredients:
2 cups cooked chicken breast, diced (grilled or poached) ![]()
1 large avocado, cubed ![]()
1 cup cherry tomatoes, halved ![]()
2 cups fresh lettuce or mixed greens ![]()
2 tbsp fresh cilantro or parsley, chopped ![]()

Method:
In a large bowl, add the lettuce as the base.
Top with diced chicken, avocado chunks, and halved cherry tomatoes.
In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
Drizzle the dressing over the salad.
Sprinkle with fresh cilantro/parsley for extra flavor.
Toss gently and serve immediately
