Gooey Pecan Pie Brownie Bombs

 

Ingredients:

For the Brownie Layer:

1 box brownie mix (plus ingredients listed on the box)

For the Pecan Pie Filling:

1 cup pecans, chopped

1/2 cup brown sugar

1/4 cup corn syrup

2 tbsp unsalted butter, melted

1/4 tsp vanilla extract

Pinch of salt

For the Chocolate Coating:

1 1/2 cups semi-sweet chocolate chips

1 tbsp coconut oil or vegetable oil

Instructions:

Prepare brownies according to package instructions, baking them slightly underdone for a gooier texture. Allow to cool, then cut into squares.

In a bowl, mix pecans, brown sugar, corn syrup, melted butter, vanilla, and salt until combined to make the pecan pie filling.

Scoop a spoonful of brownie, flatten slightly, and place a small amount of pecan filling in the center. Wrap the brownie around the filling, rolling it into a ball.

In a microwave-safe bowl, melt chocolate chips with coconut oil in 20-second intervals, stirring until smooth.
