GRAHAM CRACKER TOFFEE

Ingredients:
2 sleeves graham crackers
1 ¼ cups butter (2 ½ sticks)
1 ¼ cups brown sugar
2 ½ cups chopped pecans
1 teaspoon vanilla extract
¾ cup mini semi-sweet chocolate chips

Instructions:
Preheat oven to 350°F.
Arrange graham crackers in a single layer on a parchment-lined or silicone mat–lined baking sheet.
In a medium saucepan, melt butter over medium heat. Add brown sugar and cook until bubbling. Boil for 2 minutes, stirring constantly. Remove from heat and stir in vanilla and chopped pecans.
Carefully pour the hot pecan toffee over the graham crackers and spread evenly with a spatula.
Bake at 350°F for 10 minutes.
Remove from oven and sprinkle with mini chocolate chips. Let cool on the baking sheet for 1 hour or until firm.
