Ingredients
2 cups cooked chicken, shredded
1 cup pineapple chunks
1/2 cup red bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup cilantro, chopped
1/4 cup mayonnaise
1 tbsp lime juice
1/2 tsp salt
1/4 tsp black pepper
Instructions
In a large bowl, combine shredded chicken, pineapple, red bell pepper, red onion, and cilantro.
In a small bowl, mix mayonnaise, lime juice, salt, and black pepper.
Pour the dressing over the chicken mixture and toss gently to coat.
Refrigerate for at least 30 minutes before serving.
