Mediterranean Salmon Spinach Patties

Ingredients
2 large eggs
2 cloves garlic, minced
2 tablespoons red onion, finely chopped
1 (14–15 oz) can salmon, drained and flaked (or 1 cup cooked fresh salmon)
1 cup fresh spinach, finely chopped
½ cup breadcrumbs (or panko)
1 teaspoon lemon zest
1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
1 teaspoon dried oregano
Salt and pepper, to taste
2–3 tablespoons olive oil, for frying
Optional: 2 tablespoons feta cheese, crumbled
Instructions
Prepare the mixture:
In a large bowl, combine flaked salmon, chopped spinach, breadcrumbs, eggs, garlic, onion, lemon zest, dill, oregano, salt, and pepper. Add feta if using. Mix until well combined.
Form patties:
Shape mixture into 6–8 patties, about ¾-inch thick.
Cook patties:
Heat olive oil in a large skillet over medium heat. Fry patties 3–4 minutes per side, until golden brown and cooked through.
Serve:
Serve warm with lemon wedges, tzatziki sauce, or a side salad.
