Directions
Sear the steak:
Heat olive oil in a large pot over medium-high heat. Add the sliced steak, season with salt and pepper, and sear until browned. Remove from the pot and set aside.
Sauté the vegetables:
In the same pot, add a little more oil if needed. Sauté the onion, garlic, and red bell pepper until the onion turns translucent, about 3–4 minutes.
Add liquids and seasoning:
Stir in the diced tomatoes (with juice), beef broth, Italian seasoning, and red pepper flakes. Bring to a simmer.
Cook the pasta:
Add the pasta directly into the pot and stir well. Cover and cook, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed (about 10–12 minutes).
Combine and finish:
Return the cooked steak to the pot and stir to heat through. Add the grated Parmesan cheese and mix until melted and creamy. Taste and adjust seasoning as needed.
Serve:
Sprinkle with fresh parsley before serving.
