**Spicy Cajun Crab Cakes**

**Instructions:**
**Gently combine:** In a large bowl, combine the crab meat, mayonnaise, celery, red bell pepper, green onion, Cajun seasoning, and Old Bay seasoning. Mix everything together delicately – you don’t want to break up the crab meat too much.
2. **Add binder:** Stir in the bread crumbs and the beaten egg until just combined. Don’t overmix!
3. **Form patties:** Shape the mixture into 6 equal-sized patties.
4. **Cook the cakes:** Heat the olive oil in a large skillet over medium heat. Carefully place the crab cakes in the skillet and cook for about 4-5 minutes per side, or until golden brown and heated through. Be gentle when flipping!
5. **Serve & enjoy:** Serve immediately. These are delicious on their own, or with a side of your favorite vegetables (steamed green beans or a simple salad are perfect!).
