you will need
2 hard-boiled eggs, peeled
1 tbsp mayo or Greek yogurt
1 tsp mustard (optional)
Salt & pepper to taste
Pinch of paprika or chili flakes (optional)
1โ2 slices of bread, toasted
Optional toppings: chopped chives, microgreens, sliced radish, or avocado
instructions
Mash the hard-boiled eggs in a bowl using a fork.
Add mayo (or Greek yogurt for a lighter version), mustard (if using), salt, and pepper. Mix until creamy but still a little chunky.
Toast the bread slices to your preferred crispness.
Spread the egg mixture generously over warm toast.
